I didn't know you could make jelly out of crab apples! Ours are very bitter.
They do have a bit of a sour taste, but if you make sure you get some ripe ones that are turning soft they make the best and prettiest jelly in the world. I use a pectin product to make sure it sets up without a lot of cooking. It takes about 8 pounds of apples to make 7 half pint jars of jelly!

You should, because it is really good, even if it is a tad time consuming. I don't know what I did wrong, but I got a lot more jelly than the directions said I would. I used the Ball product this time. I usually use Sure-Jell. I know you need to plan on cooking more apples than the directions say. That amount may work for big apples, but it doesn't for crab apples. I think they are drier or something. The juice is very thick.
